On St. Patrick's Day, I was on the phone with my mom. She asked me if I was doing anything fun for the holiday. I said, "Well, I found a recipe for a green drink called a Green Lantern." She asked me what went into it. I told her. She paused and then said, "That sounds horrible!"
But it sounded just horrible enough for me to want to try it out, simply because I was so curious what parsley - yes, parsley - would taste like when blended with lime and sugar. It's the same kind of curiosity you have when you're in the 8th grade and your parents drop you and your friends off at the movies long before the movie starts and there just happens to be a health food store right next to the theater and they're giving out free samples of pureed wheatgrass. Why not? What have you got to lose?
It was pretty darn good. Next time I'm cutting back on the sugar, but other than that, yummy. I'm making these again soon.
All it is - a cup of parsley, 1/2 c sugar (I'll probably use 1/3 or 1/4 next time), 1/2 c fresh lime juice, 1/2 tsp. lime zest, a cup of cold water. Blend it for a minute, pour it in a glass with ice, top with club soda (add a little gin if you like), and get ready for little bits of parsley in your teeth for the rest of the evening.

Ooh I'm gonna try it! I'm all about weird things that leave green stuff between my teeth. (Actually, I'm all about blended anything - and I think gin sounds perfect.)
